Stuffed vegetables are a versatile and delicious dish that can be adapted to various tastes and dietary preferences. Here’s a basic recipe for Stuffed Bell Peppers, but you can use the same method for other vegetables like zucchini, tomatoes, or eggplant.

Stuffed Bell Peppers

Ingredients:

  • 4 large bell peppers (any color)
  • 1 cup cooked rice (or quinoa for a gluten-free option)
  • 1/2 pound (225 grams) ground beef, turkey, or sausage (or use a plant-based alternative)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (fresh or canned)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish (optional)

Instructions:

  1. Prepare the Peppers:

    • Preheat your oven to 375°F (190°C).
    • Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  2. Cook the Filling:

    • In a large skillet, heat the olive oil over medium heat.
    • Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute.
    • Add the ground meat and cook until browned. Drain any excess fat.
    • Stir in the diced tomatoes, cooked rice, dried oregano, dried basil, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to combine.
    • Stir in half of the shredded cheese.
  3. Stuff the Peppers:

    • Spoon the filling mixture into each bell pepper, packing it in tightly.
    • Place the stuffed peppers upright in a baking dish.
  4. Bake:

    • Sprinkle the remaining shredded cheese on top of each stuffed pepper.
    • Cover the baking dish with aluminum foil and bake for 25-30 minutes.
    • Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  5. Serve:

    • Garnish with fresh parsley or basil if desired.
    • Serve the stuffed peppers hot.

Variations:

  • Vegetarian: Replace the meat with beans, lentils, or a mix of vegetables.
  • Spicy: Add some chopped jalapeños or red pepper flakes to the filling.
  • Cheesy: Mix additional cheese into the filling or use different types of cheese for variety.
